It may have been the ukulele Disney playlist that intrigued me as we walked along the beach path.
The Happy Coconut is connected to a gorgeous eco resort called the Mar Adentro Sanctuary. As soon as we entered their quaint beach side oasis, we were greeted by the sweetest staff members. I actually learned the most Spanish at this spot just speaking back and forth with our server since they were always so kind.
My favorite word to learn was “calala” which means passionfruit in Spanish.
So let’s talk about the menu and by menu I mean let’s talk about the absolutely intoxicating, and freshly made, sourdough French toast. It made my taste buds sing so loud that even the sirens in the ocean could hear them. I have a huge love for sourdough but somehow they just do it so right. The dish comes paired with a bowl of freshly cut fruit from the farms which usually consisted of papaya, watermelon, and bananas.

Organic & Fresh
The one thing that draws me to island life and cultures such as the one found in Nicaragua is the fact that food is so fresh, organic, nutrient dense, and affordable.
I ordered a chocolate smoothie which was made with papaya, cacao, banana, and almond milk. My stomach doesn’t love lactose, so ordering here was easy since it’s so vegan friendly on the dairy options. I would also suggest the breakfast burrito and anything else off the breakfast menu since it’s all made with love and care and I will dream of that French toast until the day I die.
Once you’ve had your fill, you can walk a few feet to the softest hammocks you’ll ever lay in. The lounge area is full of white sand and these adorable crabs called “Halloween crabs” or “Gecarcinus quadratus” for all you science nerds out there. I could sit and watch them crawl around all day they are so cute.
Take a little breaky break
Lay on a hammock and slow down.
As the sun rises or sets, this was usually a stop I tried to make daily if I could. The vibes were so soft and gentle that even if I felt overwhelmed or tired I would pop in, grab a smoothie, and chill out.
